Very basically a server OS has more network functionality and security such as user management, better file sharing ability, mail control, repository for central databases and/or files, etc. Very robust and not be toyed with by the normal user. Because the server is the hub of a network (read business) it is very important that only people who know what they are doing should be playing around on it (ie system/network/Databases administrators).
The normal OS that you have on your desktop is far more easier to use and maintain, it is not really designed for being the centre of a network and having 100's of people connecting to it. Most Server software won't run on it either.
